Healthy Eating in April

Ohh… this coincides nicely.   I was going to talk about our meals for this month (January, February, March) and the challenge for this week is healthy eating!  I can’t say that EVERYTHING I made this month of April was really healthy, but most of it was.  It was all better than store-bought that’s for sure. 🙂   Stay tuned for the linky below.   We did some healthy eating in April for sure!

Breads

Braided Easter Bread.  This disappeared fairly quickly.  Hubby helped me to transfer the ring to my baking sheet as I couldn’t figure out how to move it on my own. 

I also made scones which are something I used to make all the time. I’m not sure why I stopped.  My fellows were happy with my decision to make them again. 

Simple Whole Wheat bread.  I made this a while back and decided it was time to make it again.  It turned out a bit heavy, but was ever so good hot out of the oven with a touch of honey.  I made them into cheese buns, dinner buns and a loaf of bread.

Okay, my GOAL was to make donuts.  Regular ordinary homemade donuts.  Couldn’t find our donut making tray so I went to a different style.  The directions and my collection of pastry cutters didn’t mesh so… I decided that Donuts Holes it would be!  I cooked them, the lad made the glaze.  It worked well.  Such a quick disappearance. I was quite surprised when I went to wash the container… someone didn’t close the lid and well um, we had an “ant surprise”.  Let’s just say that about 100 ants were washed into our pond for the goldfish to enjoy.  BLECH!!!! 

We normally do a special breakfast on Easter Sunday, but you know… COVID!  Allrecipes.com sent me an email that had a recipe for Churros and I thought hey…that looks easy enough.  And it was!  The lad and I enjoyed them during our Easter Service. Hubby kept saying “I don’t want any”.  We took him at his word.  Later one he complained, “You didn’t save any for me!”  GAH!!   There’s no winning somedays eh!

I THOUGHT I had a picture of the donuts and churros, but alas… cyberspace has swallowed them…

Meat Dishes

Pesto Chicken. This was a huge favourite with my fellows and they wished I had made more of them.  I will definitely do this recipe again some time.

Cordon Blue Chicken Rolls:  I didn’t make the cordon bleu sauce, I used turkey bacon instead of ham, and panko not corn flakes.  I thoroughly enjoyed these but would put a bit more bacon on them next time.   I used cheddar cheese.   It was an interesting challenge to for me.

Easy Tuna Patties made for a quick meal one night when we were tired of chicken and ground beef. 

Chicken barley Soup, I really like this soup and have made it more than once.  I’ve changes seasonings, added lipton  soup to it, and changed the meat source.  But it’s an easy soup to make and my lad really likes it too. 

Tuna and cheese casserole.   I totally forget to add the cream soup… this was so good.  My son (14 years old) ate HALF OF IT!!!  Hubby was so disappointed. so make it, and “forget the soup”.

Apple Dishes

I was gifted about a bushel of apples one week and they NEEDED to be used up, I made applesauce, a couple of apple crisps (I made two since hubby complained he didn’t get enough of the first one) and then two different apple loaves. 

Dutch apple loaf and Apple Fritter loaf.  Very similar. but with different toppings.   I added extra apple to both recipes but should have added a bit more to the dutch loaf.  Of the two I preferred the Dutch Apple Loaf but the lad liked the apple fritter one better.   

Apple crisp is always a favourite in this household. I made one (used a different one than the one I linked) but hubby complained that it disappeared far too quickly.  I made another since I had lots of apples.  🙂 Oddly enough the second one disappeared almost as quickly and I didn’t even get any!   My fellows and their love of yumminess.  🙂  

Apple strudel Muffins.  These came out really dry, but they were excellent with some hot chocolate.  If you are a hot coffee or hot tea drinker they’d probably go well with that too.  Third day I polished off what was left and totally blew my calories for the day. 🙂 

I made a goodly amount of applesauce, I put four ziploc bags in the freezer.  Frozen applesauce is one of my favourite treats (eating it barely thawed). My applesauce is never sweetened. I do cook it with the skin on so once I put it through the mill it comes out nice and pink.  I had some tonight with some rice… it was SO yummy.  🙂
